Il dolceforte è uno dei modi di preparazione delle carni più antico e più tipico della cucina fiorentina. Si preparavano così la lepre, il cinghiale, la lingua di manzo, erano piatti un po' speciali, usati nelle ricorrenze importanti.
Le preparazioni in dolceforte sono ormai introvabili sia nei ristoranti che anche sulle tavole delle case fiorentine. Un po' perché richiedono tempi di preparazione lunghi, un po' perché forse non rispondono all'evoluzione del gusto. Tuttavia vogliamo ricordarli e anche proporli a chi volesse provare a fare un salto nella cucina antica e gustare sapori quasi completamente scomparsi. La ricetta che vi proponiamo è per la lepre, ma la stessa preparazione è usata anche per il cinghiale, la lingua e perfino per il baccalà.
